"Standardization of process for juice clarification from aonla ( Embilica officinalis Gaertn) fruits” was aimed to standardize formulation for the preparation of nutritional as well as medicinal drink by juice clarification of juice. Clarified of aonla juice with different concentration of enzyme evaluated by complete randomized design with factorial concept and three repetitions for changes in chemical and sensory qualities during storage period at Initial, 3, 6 months at room temperature.
